Meat lovers rejoice over Wellbone Meat Co.

Are you in the mood for a sizzling grilled ribeye steak for dinner? Or how about a lean ground patty for lunch?

While each cut has its own characteristics and flavors, there’s another type of meat you might consider trying: Mexican style.

You can get your fill of specialty Mexican meat from The Wellbone Meat Co. at the Scripps Ranch Farmer’s Market on Thursdays.

The company was founded in 2020 during the COVID pandemic by Fernando Vizcarra and Fernando Vizcarra, Jr.

The meat is “a leaner, more affordable option for meat lovers who crave delicious steaks and other meat products,” said Salvador Valera, the company’s chief marketing officer.

It took some time and thought to produce just the right name for the company.

“It was the result of an exhaustive design process. We landed on Wellbone as a brand name for the following reasons: It’s short and easy to remember, with just two syllables. Wellbone is a straightforward name that should be easy for everyone to remember. It has a positive connotation. The word ‘well’ is associated with good health and wellness, a strong selling point that resonates with who we are and what our customers want,” Valera said. “It is also a reference to the quality of the meat products we select and offer. The word ‘bone’ is a metaphor: the core of who we are, and it’s also a synecdoche – the variety of meat products we offer from different animals.”

If you purchase the meat online with a subscription it is delivered via its temperature-controlled box right to your doorstep, similar to the Omaha Steak brand. If you’re in the Southern California area, you automatically get free delivery. Plus, all meats come frozen for the best preservation.

The company’s cattle are pasture-raised and grain-finished, and it employs farmers who are conscious of the environment and the supply chain around the meat they produce. 

The company website states its “priority is to create a supply chain that puts animal welfare first while also supporting independent farmers.”

There are a variety of packages and deals that customers can choose when ordering online to enjoy at-home beef and pork. Each selection is super lean and family-friendly – and convenient for cooks of all ages.

Every single serving of meat is hand-cut and aged for seven to 28 days. That aging process gives the product its extra flavor and tenderness. Once done, each serving is individually sealed and packed, and then flash-frozen. This process preserves not only the flavor but also the vitamins and minerals within.

Customers can taste Wellbone Meat at the Scripps Ranch Farmer’s Market where they have been selling it for the past few months.

Wellbone enjoys selling at the Scripps Ranch Market because it’s a fun crowd, the owners said.

Valera said the future of the business looks bright and he hopes to attract more customers through the market.

“We want to provide the taste of home and tradition to families across the nation,” he said.
