Pacifica Culinaria: quality cooking oils

Foodies rejoice! The Pacifica Culinaria booth at the Scripps Ranch Farmer’s Market provides a supply of mostly imported, finely-blended oils for cooking and mixing with food.

The company offers avocado oils, vinegars, olive oils. The product line just in the avocado oil category alone includes such flavors as blood orange, key lime, roasted garlic, coastal lemon and many more.

“We manufacture all these oils, blend them; all-natural flavors,” explained Michael Head, the man who has run a contract manufacturing business for years.

The family runs a processing plant in North County where it does the mixing, processing, bottling and labeling.

The products from Pacifica Culinaria are available online, in a few stores and at select farmer’s markets, including the Scripps Ranch Farmer’s Market.

“We have balsamic vinegars that are imported from Italy. We have the olive oil, again imported from Italy.” Michael said.

“Probably the most popular product that we have is the garlic avocado oil, which is great for vegetables and grilling because the avocado oil itself has a high smoke point, up to 500 degrees,” he said.

“I’ve been known to use these (avocado oils) for meats, usually shrimp, fish, chicken. I usually use the Tuscan herb for chicken,” explained Brian Head, Michael’s grandson. “They have a really high smoke point, so there is a good range of things that you can cook and do with these oils. … You can put them on vegetables or fruit.”

Brian said that he generally pours the oils on chicken or beef before placing the meats in the oven so they won’t stick, but his mother will add the Tuscan herb product halfway through cooking chicken for the flavor.

These finely produced products sell for $15 a bottle and they have a three-item sample pack for $24. They offer a variety of gift packs online at pacificaculinaria.com.
